Paolazzi
The Paolazzi Vittorio distillery was founded in 1962 in the municipality of Faver in the Cembra Valley to continue the family tradition of "lambicar", which is now carried on by his son Martino.
After the First World War, the distillation of marc became illegal and was carried out in secret in the Cembra Valley: a risky activity that nevertheless made it possible to survive in a very harsh and poor peasant economy. It is for this reason that the dialect term "lambicar" takes on a double meaning: "the art of making grappa (distillation)" and "to lead a life of hard work and toil in the poor peasant economy of the past". His paternal great-grandfather Giuseppe owned a distillery before the annexation of Trentino to Italy, when the production of grappa for domestic use was permitted. Subsequently, his grandson Vittorio, who had completed his studies at the Agricultural Institute of San Michele, decided to refine the "lambic" activity of the family farm by creating a small distillery. In order to respect the tradition of Trentino and Cembrano, the discontinuous steam distillation method was chosen.
Today, after more than 60 years of activity, the small distillery has grown and accumulated a lot of experience in distillation and in taking care of all the details necessary to obtain quality products while maintaining typicality and tradition.
