When they founded Cignomoro in 2008, they had  clear ideas: to question the homologation of flavors and breathe life into Apulian wines that are unique, elegant and harmonious with every sip. This is also why  they call themselves  a "boutique winery": each individual bottle is part of a limited production, almost pampered, personally cared for from the bunch to the sip, to amaze taste buds that are not satisfied. They decided  to believe in the land of Apulia  and in the most authentic wine: thus the most modern winemaking techniques adopt ancient practices that are almost rituals, such as the manual harvesting of grapes. With honor, they feel themselves courageous guardians of an ancient land, without compromise. Salento and red wines: if vines were already grown in the Salento countryside of Manduria in the seventh or sixth century BC, there is a reason: the "mare nostrum" with its perfect microclimate caresses the grapes and turns them into a masterpiece.
